The beauty of these energy bars is that they are easy to assemble and there’s no baking involved.The fruit will give you a burst of natural sugars and the seeds are a source of protein, which will keep you feeling fuller for longer. As a whole the bar is high in fibre and perfect for a burst of energy after training or a long run. 1 energy bar will give you 1 portion of your 7-a-day.

Method

Put the dried fruit, cacao powder, chia seeds, honey, and warm water in a large bowl and stir well. Cover the bowl and leave to one side for about 1 hour. After an hour the chia seeds should have absorbed the water and the mixture should be a paste. Stir in the sunflower seeds and sesame seeds.

Line a square brownie tin with baking parchment. Press the mixture into the tin and smooth it down. Drizzle the melted chocolate over the top then put the tray into the fridge to chill overnight. Slice into bars the following day. These will store in the fridge for up to 5 days.
