Ingredients

1 packet packet Pork Medallion Pork Medallion
1 pieces piece Pineapples Pineapple
(peeled and cut into 8 quarters)
1 tsp tsp Chilli Powder Chilli Powder
2 tsp tsp Oregano Oregano
2 tbsp tbsp Olive Oil Olive Oil
1 handfuls handful Coriander Coriander
(chopped)

Method

  1. First, get your barbecue or grill fired up.
  2. Mix 1 tbsp of olive oil with the oregano and rub over the pork. Season with salt & pepper. Mix 1 tablespoon of the oil with the chilli powder and rub over the pineapple. Grill each piece for 4 minutes each side, or until light char marks have developed.
  3. Now, grill the pork for 3 minutes on each side, or until cooked.
  4. Mix the chilli sauce, coriander and crème fraîche together and serve with herby couscous.
