Method

This is a great dish to cook in a slow cooker ifyou have one!

Method

1. Trim the beef, season it and toss it in the flour.

2. Take a large frying pan, add the oil and butter andbrown the beef. Set the beef aside in an oven proofdish. Deglaze the pan by adding the stock andscraping all the yummy pieces from the base. Add thisto the browned beef.

3. Stir in the Guinness, the Ballymaloe relish, thewholegrain dijon mustard, the vegetables (except themushrooms) and the herbs.

4. Cover with a tight-fitting lid and cook slowly for 2-3hours either in the oven or on the hob until beef istender and sauce has thickened. Adjust seasoningwith salt and pepper, if required.

5. Meanwhile as the beef is cooking, take the cleanedfrying pan and add a little more oil and butter. Addthe cleaned mushrooms and cook until browned. Foldinto the stew, just before serving.

6. Serve with stir fried cabbage and creamy mashedpotatoes.
