Fresh Tomato Soup with Basil

Preparation

    A classic soup made from fresh ingredients, packed with flavourand full of goodness. Perfect for cold winter evenings.

  1. Wash the tomatoes and boil them in boiling water.
  2. Briefly leave then drain.
  3. Peel onions and dice.
  4. Peel the garlic and cut into thin slices.
  5. In the hot oil, briefly fry, then remove and set aside.
  6. Peel the onion and blitz.
  7. Add tomato paste and sauté.
  8. Add tomatoes, wine and broth.
  9. Season with salt, pepper and sugar and boil.
  10. Boil the soup for about 10 minutes.
  11. Wash basil, shake dry and peel leaves, cut into strips and set aside.
  12. Add the remaining leaves to the soup and puree them.
  13. Season and sprinkle with garlic and basil.
