Dragon Eggs in a Nest (Eggs with Avocado Dip)

Preparation

  1. Boil eggs for 10 minutes and allow to cool slightly.
  2. Part remove the eggshells.
  3. Dilute food dye with water (the liquid should have a deep colour).
  4. Dip eggs with the dye.
  5. Refrigerate for a minimum of 3 hours or overnight as this allows the food colouring to absorb into the eggs.
  6. Cut peppers into small julienne strips.
  7. Remove stone from avocado, half and mash.
  8. Mix peppers and avocado together with lime juice.
  9. Season with salt and pepper.
  10. Place eggs in the centre of a plate and place pepper and avocado salad around the eggs.
