We all love a meal that requires minimum effort for maximum flavour. Cook this lamb dish in the slow cooker and benefit from a beautiful family feast after spending only 20 minutes in the kitchen. Serve with butter bean mash.
1 Put the lamb into a large slow cooker along with the garlic and rosemary. Season well with salt and pepper. Cover and cook on high for 6-8 hours.
2 Scoop out 5 cloves of garlic and place into a frying pan with the olive oil. Heat on medium. Pour in the drained butter beans and gently fry until heated through. Season with salt and pepper.
3 Carefully pour the contents of the frying pan into a food processor and blitz until you get a smooth puree. Stir in the parsley and lemon juice.
4 Serve the lamb on a bed of the butter bean mash with a fresh green salad.
