Pork Loin Medallions with Barbecued Pineapple and Coriander Crème Fraîche
- First, get your barbecue or grill fired up.
- Mix 1 tbsp of olive oil with the oregano and rub over the pork. Season with salt & pepper. Mix 1 tablespoon of the oil with the chilli powder and rub over the pineapple. Grill each piece for 4 minutes each side, or until light char marks have developed.
- Now, grill the pork for 3 minutes on each side, or until cooked.
- Mix the chilli sauce, coriander and crème fraîche together and serve with herby couscous.
